Gluten Free Sheet Pan Pancakes

This recipe came about when I wanted pancakes, but didn’t want to spend all morning making individual ones.

Ingredients

  • 2 cups gluten free flour (I use King Arthur Gluten Free Measure for Measure)
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups milk
  • 3 eggs
  • 1/4 cup canola oil

Directions

  1. Preheat oven to 375 F
  2. In a medium mixing bowl mix the dry ingredients: flour, sugar, baking soda, salt, and baking powder.
  3. Add the wet ingredients and mix to combine.
  4. Spray a 15.5″x10.5″ Jelly Roll Pan with cooking spray.
  5. Scrape the mix onto the pan.
  6. Bake for 25-30 minutes.
  7. Let cool for 5 minutes before cutting.

Notes

  • I’ve also done this in a 9″x13″ cake pan in a pinch. You just get really thick pancakes, but still delicious.
