This recipe came about when I wanted pancakes, but didn’t want to spend all morning making individual ones.
Ingredients
- 2 cups gluten free flour (I use King Arthur Gluten Free Measure for Measure)
- 1/4 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 cups milk
- 3 eggs
- 1/4 cup canola oil
Directions
- Preheat oven to 375 F
- In a medium mixing bowl mix the dry ingredients: flour, sugar, baking soda, salt, and baking powder.
- Add the wet ingredients and mix to combine.
- Spray a 15.5″x10.5″ Jelly Roll Pan with cooking spray.
- Scrape the mix onto the pan.
- Bake for 25-30 minutes.
- Let cool for 5 minutes before cutting.
Notes
- I’ve also done this in a 9″x13″ cake pan in a pinch. You just get really thick pancakes, but still delicious.
